1 prepared pie crust (Trader Joe's) or homemade bottom pie crust
1 shallot, minced
1 clove garlic, minced
1 tsp olive oil
3 C packed, chopped fresh spinach
3 eggs, beaten
1½ C half and half
2 green onions - dark green tops only, chopped
1 tsp ground pepper
1 tsp kosher salt
½ C italian 4 cheese mixture (we like quattro formaggio from TJ's)
½ C cubed feta cheese
Instructions
Prepare pie crust according to package instructions. Set aside to cool.
Preheat oven to 375 degrees. Heat oil in a large skillet over medium heat. Add chopped shallots and sautee for 2 minutes. Add garlic and continue to sautee for another minute. Add chopped spinach and cook until wilted. Remove from heat and set aside to cool.
