Add frozen bananas to a food processor or high powered blender. Mix on high until broken down and smooth. Add coconut cream, pineapple and vanilla and continue to mix on high until incorporated.
Transfer to an airtight container and freeze for at least 2 hours. Serve with toasted coconut flakes on top.
