1 15oz can garbanzo beans, drained + 3 Tbsp of reserved liquid from the can
2 Tbsp tahini
½ medium lemon, juiced
1 clove garlic, pressed
kosher salt to taste
⅓ C chopped cherry tomatoes
⅓ C english cucumbers
⅓ C feta cheese, crumbled
¼ C sliced kalamata olives
Instructions
Add garbanzo beans, tahini, lemon juice and garlic to a food processor. Pulse on high until smooth. Season with kosher salt to taste and pulse until mixed.
Transfer hummus to a low bowl. Top with tomatoes, cucumbers, feta and olives.
Serve alongside your favorite veggies, pita bread or chips.
