Loaded Mediterranean Hummus

Ingredients
  • 1 15oz can garbanzo beans, drained + 3 Tbsp of reserved liquid from the can
  • 2 Tbsp tahini
  • ½ medium lemon, juiced
  • 1 clove garlic, pressed
  • kosher salt to taste
  • ⅓ C chopped cherry tomatoes
  • ⅓ C english cucumbers
  • ⅓ C feta cheese, crumbled
  • ¼ C sliced kalamata olives
Instructions
  1. Add garbanzo beans, tahini, lemon juice and garlic to a food processor. Pulse on high until smooth. Season with kosher salt to taste and pulse until mixed.
  2. Transfer hummus to a low bowl. Top with tomatoes, cucumbers, feta and olives.
  3. Serve alongside your favorite veggies, pita bread or chips.
