Sweet Corn & Quinoa (Copycat Flower Child)

Ingredients
  • 1 C (uncooked) quinoa, cooked according to package instructions
  • 1 C sweet corn (fresh off the cob, canned or frozen and defrosted)
  • ½ C grated parmesan cheese
  • ⅓ C 2% greek yogurt
  • S&P to taste
Instructions
  1. Cook quinoa according to package instructions.
  2. Remove from heat and immediately add corn, parmesan cheese and greek yogurt. Season with S&P to taste. Serve immediately
Note - if you prefer a thinner consistency, thin with a bit of milk.
