Fresh Fig & Goat Cheese Salad

Ingredients
  • 5 oz spring mix or aragula
  • 6 fresh black mission figs, quartered
  • ¼ C goat cheese, crumbled
  • ¼ C toasted slivered almonds
  • 3 Tbsp red wine vinegar
  • 1 Tbsp dijon mustard
  • 1 tsp raw honey
  • ⅓ C good quality olive
  • kosher salt and cracked pepper to tastea
Instructions
  1. In a large low bowl add spring mix. Top with figs, goat cheese and slivered almonds.
  2. Add vinegar, dijon, honey and olive oil to a small mason jar. Shake vigurously until combined. Season with S&P to taste.
  3. Drizzle vinaigrette over salad and toss to coat. Serve immediately.
