Chicken & Nectarine Green Salad

Ingredients
  • 1 head red leaf lettuce, chopped
  • 1 ripe nectarine, pitted and sliced
  • grilled chicken breast, sliced thin
  • 3 medjool dates, chopped
  • ¼ C toasted pecans or walnuts
  • ¼ C blue cheese, crumbled
For the Dressing:
  • 1 small clove garlic, minced
  • 1 tsp dijon mustard
  • 1 tsp raw honey
  • ¼ C white wine vinegar
  • 2 Tbsp good quality extra virgin olive oil
  • S&P to taste
Instructions
  1. For the dressing add all ingredients to a blender or use an immersion blender and blend on high until combined.
  2. Add lettuce to a large salad bowl. Line in strips across the top - sliced nectarines, chicken, dates, pecans and blue cheese.
  3. Serve with dressing on the side or toss to coat and serve.
