Shaved Chicken & Pear Panini

Ingredients
  • 4 ciabatta rolls, sliced through the middle
  • dijon mustard
  • 1 chicken breast, grilled and sliced thin
  • 4 sliced good quality white cheddar cheese (can sub fontina cheese)
  • 1 bartlett pear, sliced
  • handful of fresh arugula leaves
Instructions
  1. Heat a panini press or use a cast iron skillet.
  2. Line sandwich halves with dijon mustard. Top one side with grilled chicken slices, white cheddar cheese, sliced pears and arugula. Place halves together.
  3. Grill on panini press until melted and grill marks appear. If using cast iron skillet weigh the top of the sandwich down, flip and cook the other side equally.
