Slice bread into ½ inch slices. Lightly spray each side of bread slices with olive oil spray and line on a sheet pan. Toast in the oven for 5 minutes. Remove and allow to cool.
Top each slice of toasted bread with ricotta cheese, spread evenly. Top with strawberries and blueberries. Drizzle with honey, season with a pinch of kosher salt and garnish with fresh mint leaves. Transfer to a serving platter and serve immediately.
