In a large skillet heat olive oil over medium heat. Add onions and chopped red peppers and sautee until softened - about 5 minutes. Add garlic and sautee for an additional minute. Transfer to a plate.
Return skillet to the burner over medium heat. Add ground turkey and cook until browned, about 8-10 minutes. While the turkey is cooking add all remaining ingredients to a bowl except for S&P and whisk together until mixed.
Once turkey is browned add sauteed onions/red peppers and the sloppy joe sauce. Stir to mix together and cook for an additional 2 minutes. Season with S&P and serve inside a toasted bun.
