In a small saucepan over medium high heat combine all ingredients except for the orange zest. Bring to a boil and reduce to low, cover and continue to cook for 12-15 minutes until the sauce thickens. Remove from heat and set aside to cool, garnish with orange zest.
Good Thyme Tip - If relish is too thin add ½ tsp corn starch mixed with 1 tbsp warm water to thicken. The relish with thicken up as it cools as well.
