BBQ Chicken Pizza with Smoked Mozzarella

Ingredients
  • 2 Naan breads
  • 1 C homemade BBQ sauce (see below - or use your favorite storebought BBQ sauce)
  • 1½ C smoked mozzarella cheese, grated
  • 1 C shredded BBQ chicken (pre-cook chicken breast or tenders, using BBQ sauce as a marinade. Once cooled, shred for pizza)
  • ⅓ C red onion, sliced thin
  • ¼ C cilantro, chopped
For the Homemade BBQ Sauce:
  • ½ C ketchup
  • 2 Tbsp brown sugar
  • 2 Tbsp worcestershire sauce
  • 1 Tbsp cider vinegar
  • 3-4 dashes hot pepper sauce (we use smokey chipotle pepper sauce) - adjust based on the amount of heat you prefer
  • 1 clove garlic, minced
  • ¼ tsp Coleman dry mustard powder
  • 1 tsp liquid smoke
  • 1 Tbsp molasses
  • ¼ tsp salt
Instructions
  1. Preheat BBQ - can also cook in the oven, if cooking in the oven preheat oven to 425 degrees.
For the BBQ sauce:
  1. In a bowl whisk all ingredients together.
For the Pizza:
  1. Brush BBQ sauce on the Naan bread to coat. Divide the shredded chicken in half and spread over each pizza evenly, do the same with the red onions and mozzarella. Place pizza directly on the grill or in the oven directly on the oven rack. Cook for approximately 5 minutes or until cheese begins to bubble slightly around the edges. Garnish with equal amounts of chopped cilantro.
Note - The ingredients call for 1 cup of BBQ sauce. This is intended to also be used as a marinade for the chicken as well as the base for the pizza.
