Caramelized Onion & Bacon Dip

Serves: Makes about 2 cups
 
Ingredients
  • 2 large yellow onions, chopped in ⅛ inch slices
  • 1 Tbsp olive oil
  • 1 Tbsp unsalted butter
  • 1 Tbsp balsamic vinegar
  • S&P to taste
  • 4 slices cooked uncured applewood smoked bacon, cooked and chopped, (nitrate free is always best)
  • 4 oz cream cheese, room temperature
  • 1 C sour cream
  • ¼ C chives, chopped plus 1Tbsp for garnish
  • ½ tsp fresh ground pepper
  • 1 tsp kosher salt
Instructions
  1. In a large sautee pan heat olive oil and butter over medium low heat. Add onions and spread out evenly in pan. Stir occasionally as the onions break down and begin to turn golden brown...do not burn! After the onions are nice and golden brown (approx 45 mins - 1 hour) add the balsmamic vinegar, stir until incorporated and continue to cook for 5 minutes. Remove from heat and cool to room temperature.
  2. In a food processor combine onions, cream cheese, sour cream and ¼ C chives. Pulse about 10X stopping to scrape down sides with a spatula. Add 3 strips of chopped bacon and S&P and pulse 1 or 2 more times to combine. Transfer to a serving bowl and garnish with remaining chopped bacon and chives. Serve with your favorite crackers.
