In a small saucepan add peanut butter, honey, vanilla and 1 Tbsp coconut oil. Heat over low heat, stirring occasionally until melted and combined.
Pour mixture over rice krispies and mix until combined.
Press mixture into a 9x9 pan using the back of a spatula.
In a small microwave safe bowl heat chocolate chips and 1 tsp coconut oil in until melted. Drizzle chocolate over the top of the rice krispy treats. Place in the freezer for 1 hour to set. Remove from pan and cut into squares. Store in an airtight container in the freezer.
