Grease miffin tins (using cooking spray or softened butter). Mix all dry ingredients in a bowl. In another larger bowl, mix almond milk, eggs, oil and vanilla and stir in the dry ingredients. Fold in the raisins, apples, carrots and zuchinni until well combined.
Fill miffin tins ¾ full with batter and bake 15 minutes or until test stick comes out clean. Allow to cool on a wire rack.
