Maple Vanilla Bean Cashew Butter

Ingredients
  • 2 C unsalted raw cashews
  • 1 vanilla bean
  • 1½ tsp vanilla
  • 1 Tbsp pure maple syrup
  • 1-2 Tbsp coconut oil
  • ¼ tsp kosher salt
Instructions
  1. Preheat oven to 325. Spread cashews out evenly over a rimmed baking sheet. Roast for 8 minutes. Remove from oven and pour into a food processor. Process for 5-10 minutes, occasionally stopping to scrape down sides. Keep the food processor going until the cashews turn into butter consistency.
  2. Remove inner seeds from vanilla bean by splitting the seed down the middle with a pairing knife and scrape out the inner pulp with a spoon. Add vanilla bean pulp, vanilla,maple syrup, and salt to the food processor and let it run until incorporated.
  3. Add coconut oil to reach desired consistency. Store in an airtight container at room temperature or the fridge.
