Heat a large saucepan of boiling salted water. Boil sweet potatoes for approx 25 minutes until tender and cooked through.
Drain sweet potatoes in a collander and remove outer skin. Add sweet potatoes back to saucepan. Add chipotle pepper, adobo sauce and butter and mash with a potatoe masher. Season with kosher salt to taste.
