Grilled Chicken with Chimichurri Sauce

Ingredients
  • 4 organic boneless skinless chicken breasts
For the Chimichurri Sauce:
  • 1 Tbs fresh oregano leaves, chopped
  • 1 C flat leaf parsley, chopped
  • ½ C cilantro, chopped
  • 3 Tbs fresh basil, chopped
  • ½ fresh jalapeño, seeded and minced
  • 1 clove garlic, chopped
  • ¼ C red wine vinegar (or apple cider vinegar)
  • ½ C olive oil
  • 1 Tbs minced shallots
  • ¼ tsp salt
  • Juice of 1 small lemon
Instructions
For the Chicken:
  1. Preheat grill or grill pan to medium - high heat. Season chicken breasts with salt and freshly ground pepper. Grill chicken approx 5 minutes per side until cooked through. Remove from heat and allow to rest about 5 minutes.
  2. Slice chicken breasts at an angle for serving.
For the Chimichurri Sauce:
  1. Combine all ingredients in a bowl, or pulse all ingredients in a food processor. Be careful not to over mix.
  2. Drizzle chicken with chumichurri sauce prior to serving.
