Chocolate Chunk Banana Bread French Toast with Fresh Strawberries

Ingredients
For the French Toast:
4 slices banana bread (see recipe below)
2 eggs, beaten
1 C fresh strawberries, sliced
100% pure maple syrup
optional - powdered sugar for dusting
For the Banana Bread:
3-4 extra ripe bananas mashed
1 large egg
¼ C coconut oil
1 Tbsp 0% plain greek yogurt
1 tsp vanilla
1 tsp ground cinnamon
1 tsp kosher salt
1 tsp baking soda
1 C packed dark brown sugar
1½ C unbleached flour - can substitute GF flour
⅓ C semi sweet chocolate chunks (optional)
Instructions
For the French Toast:
Heat a large skillet over medium heat. Dip each side of banana bread into the eggs. Cook each side of banana bread for about 2-3 minutes. Transfer to a plate and drizzle with maple syrup, top with strawberries and sprinkle with powdered sugar if desired.
For the Banana Bread:
Preheat oven to 325 degrees. In a large bowl add all of the wet ingredients and mix thoroughly. Add brown sugar, salt, cinnamon and baking soda and mix. Add flour and mix until ingredients are combined. Fold in chocolate chunks.
Grease loaf pan (we like to use coconut oil spray). Spoon batter into loaf pan. Bake for 45-55 minutes until toothpick comes out clean.
