Oven Baked Beet Chips

Ingredients
  • 2 large red beets
  • coconut oil spray
  • sea salt
Instructions
  1. Preheat oven to 350 degrees. Using a vegetable peeler, peel outer layer of skin off of beets.
  2. Using a mandalin or a sharp knife, cut beets as thin as possible. Line beets on a parchment lined cookie sheet. Spray beets with coconut oil spray and sprinkle with sea salt. Bake 15-25 minutes, thicker slices will take longer. Begin checking beets after 15 minutes and remove slices that are cooked. Continue to let thicker slices cook, checking continually and removing when cooked.
  3. Sprinkle with sea salt and serve.
