Preheat oven to 325 degrees. In a large bowl add all of the wet ingredients and mix thoroughly. Add brown sugar, salt, cinnamon and baking soda and mix. Add flour and mix until ingredients are combined. Fold in chocolate chunks.
Grease loaf pan (we like to use coconut oil spray). Spoon batter into loaf pan. Bake for 45-55 minutes until toothpick comes out clean.
Good Thyme Tip - We love to add shredded coconut to this recipe and even sprinkle shredded coconut on top before baking.
